Royal Icing

Royal Icing is made with icing sugar and egg white. Its consistency is usually firmer that butter icing but not as firm as fondant icing
- Serves
- 1
- Cook Time
- 30 minutes
INGREDIENTS
- 3 Egg whites
- 6 Cups of Icing Sugar
- A few drops of Lemon juice
- Icing Colouring as desired
DIRECTIONS
Note: While icing the cake, cover the bowl containing the mixture with a damp towel to prevent it from hardening The first coating should be light in its consistency so as to hold the crumbs of the cake Let each layer dry before coating with another layer
- Whisk Egg White
- Add Icing Sugar, cup after cup
- Mix properly till it forms a soft peak when you scoop
- Add the lemon juice
- Add colouring if necessary
- Use a piping bag or syringe to pipe with the different nozzles
Butter Icing

Butter is a topping made from butter and icing sugar. It is very easy to prepare and perfect for piped decorations

INGREDIENTS
- 6 tbsp Butter
- 2 Cups Icing Sugar
- 1tsp Vanilla Essence
- 4-6 tsp Milk
DIRECTIONS
Tip: Use royal icing with light consistency to coat the first layer so it can hold the crumbs and give you a neater result
- Cream the butter and icing sugar till the mixture is very fluffy
- Add the milk and flavour to give a perfect consistency
- When this first layer hardens, paste your butter icing and cover the cake as desired
- Tint with the colour of your choice
Fondant Icing

Fondant Icing is a thick paste that can be moulded into different shapes and sizes and perfect for design and artistic cake display
- Serves
- 1
- Cook Time
- 30 minutes
INGREDIENTS
- 1 tbsp of gelatin
- 1/2 cup of water
- 250g of liquid glucose
- 900g of Icing Sugar
- Desired Flavour
- Few drops of glycerine for moisture (in dry season)
PREPARING THE LIQUID
- With low heat on a cooker, warm the water
- Add the gelatin and stir till it dissolves, make sure it does not boil
- Scoop in the liquid glucose
- Add few drops of essence to enhance smell and taste
- Add few drops of glycerine and leave to cool
PREPARING THE FONDANT
- Sieve 1 1/2 cups icing sugar into a mixing bowl
- Pour in the cooled mixture and work through to form a dough
- Keep adding the remaining icing sugar until the dough comes together and does not stick to the hands
- If it is too hard, you could add few drops of water
- Knead in the bowl then transfer to a formica surface for about 5minutes
- Put in an air tight bag and then into a sealed container for about 12hours
- When you are ready to use the fondant, knead again on a formica surface sprinkled with little icing sugar
- Roll out on the surface and place the fondant on the cake
- Design as desired with cutters and other accessories
Basic Bread Recipe

Bread is one food that has its place in almost every home. it is so easy to snack on and a quick fix to hunger but takes a long time to prepare. Fresh home-made bread is to die for, so enjoy it
- Serves

- Cook Time
- 4 hours
INGREDIENTS
- 1.5 cups warm water
- 4tbsp yeast
- 3 tbsp sugar
- 2 tbsp vegetable oil (optional)
- 1 tsp salt
- 4 cups flour
- 8 inch pan
DIRECTIONS
- Stir warm water, yeast and sugar
- Let it stand till its frothy, 20mins
- Add the oil, salt to 2 cups of flour
- Mix well, then add the remaining flour 1/2 cup at a time
- Knead on a floured surface for 8 minutes
- Keep in a bowl and cover for 20mins to autolyse
- Knead again for about 7 mins
- Cover again for 1.5hours
- Deflate and knead again
- Prepare pan, cut dough into pan
- Leave to rise in a warm place for about 1 hour
- Place in a moderately heated oven GENTLY as bread dough is very delicate
- Bake at 280degrees for 1.5hours
Doughnut

Doughnuts are delicious and hard to resist especially when filled jam or custard. This recipe is enjoyed at any time of the day whether fried or baked .

- 5
- Cook Time
- 2 hours 30 minutes
INGREDIENTS
- 5cups of Flour
- 1/2cup of Sugar
- 2 eggs
- 1/4cup of Warm Water
- 1.5cups Warm Milk
- 4tbsp Instant Yeast
- 1/4 tsp Nutmeg
- 1/3cup of shortening
- 1tsp of Salt
- Oil for deep frying
DIRECTIONS
- Sieve flour, salt and nutmeg
- Add the sugar and yeast to the flour mixture
- Add the warm water and milk
- Melt the Vegetable Shortening and add to the mixture
- Rub in the beaten egg and mix all the ingredients in a bowl and leave for 10minutes
- Place on a smooth surface and knead for about 5minutes
- Leave to rise for about 1.5hours
- Knead on floured surface for 8 minutes and roll out.
- Cut out with a doughnut cutter and place in a tray for one hour
- Put the oil on fire and when in it hot, deep fry
- You may put jam or thick prepared custard in between before frying
